Butternut Squash Pasta



I'm terrible at remembering to import photos from my camera, so this is actually something I made way back in November. Expect a bunch of photo posts in the next couple days.

I'm a big fan of the blog Budget Bytes, which is one of the only frugal cooking blogs I've ever come across that actually features interesting recipes. This one has the consistency of a cheesy, creamy pasta dish, but the "sauce" is made of squash. The bleu cheese adds a nice tangy flavor, but the friend to whom I gave the leftovers didn't put any in and still enjoyed it very much. I changed the pasta shape and added some bacon (obviously optional, this could easily be made into a great vegan dish), but otherwise followed the original recipe, which you can find here.
